Wow. This was something, trying to make at least the caramel part of a Tarte Tatin in the BBC Radio 4 studio. Waiting for me was an extinguisher, a fire blanket and my very own private fireman called Bill. La confiance règne. In the end, the sugar syrup was barely warmed by the end of the 8 minutes allowed but formidable Jenni Murray swept me along in my explanations and, thank God, there was one I’d made earlier.
